George is a local coffee farmer from a family of five, raised on a small coffee farm. Since 2014, he has worked with a regional cooperative and ecological association, dedicating himself to improving the quality of his coffee. Over time, he bought out his siblings' share of the farm and began producing high-quality coffee in the Nyeri region, which is now sold through the association at exceptional prices, showcasing outstanding quality.
The Tabby variety is a hybrid of the Typica and Timor varieties, developed by Colombia to combat leaf rust. Known for its resistance to disease and remarkable cup quality, the cherries are carefully hand-picked, fermented for 60 hours in closed plastic tanks at temperatures of 22-23°C, and then sun-dried on raised coffee trays for 25 days.
